Chutney, Mango II (P, TNT)
Source: Venezuelan Sephardic community from the book: "Nuestra Mesa" compiled by the Caracas Wizo chapter in 1980
Serves: Depends on size of mangoes

2 mangos cut in slices
2 tablespoons vinegar
2 tablespoons sugar
Salt
Curry powder to taste (I use 1/2 teaspoon)
1/4 cup raisins softened in hot water

Boil the mango slices in salted water to cover just until tender to a fork.

Drain and add vinegar and sugar. Sprinkle with curry powder, mix lightly and add the raisins.

The chutney can be used as above or for dairy added to 1 8-oz. block cream cheese for a dip, softened with a little milk.

This is the mango "chutney" that I use.
