Turkey Meatloaf, Mexican (M)

Serves: 2

1/2 pound ground turkey or chicken
1/2 small onion, minced
2 tablespoons chopped mushrooms
1 tablespoon chopped green pepper
1 teaspoon chili pepper
salt and pepper to taste
1/2 teaspoon cumin
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon oregano
1 beaten egg
2 tablespoons finely crushed tortilla chips

Pre-heat oven to 375°F.

Mix all ingredients and form into a loaf on a baking sheet. Bake for 1 hour or until juices run clear.
