Turkey Chili w/Wheat Pilaf (M, TNT)
Source: Adapted from a Weight Watcher recipe
Serves: 4 to 6

1 box Manischewitz Wheat Pilaf
1 lb. ground turkey
1 cup mixed vegetables (can use frozen soup mix), OR any combination
1 chopped onion
1 can tomatoes with chilies OR 1 can of tomatoes and 1 chopped small jalapeno
1 can enchilada sauce, OR 1 18-oz can tomato sauce with 1 tablespoon chili seasoning
Cilantro chopped

Prepare wheat pilaf in microwave and set aside.

Sauté onion in pan sprayed with non-stick spray. Add turkey and sauté stirring and breaking up turkey until all the pink is gone. Add vegetables, tomatoes and sauce.

Simmer on low heat until flavors meld, about 20 minutes. Toss with pilaf before serving and sprinkle with cilantro.

Poster's Notes:
I adapted this from a Weight Watcher recipe. My husband, who dislikes chili and especially turkey chili, thought it was great and ate 2 helpings. That's when I revised recipe from 6 servings to 4. It is quick and doesn't heat up the kitchen on these hot days.
