Turkey Breast, Roasted II (M, TNT)

Serves: Enough for a 2 lb. turkey breast

1 cup apple juice concentrate, thawed
2 tsp. cornstarch
1/4 tsp. cinnamon
4 lemon slices

Combine apple juice concentrate, corn starch and cinnamon in small saucepan, mixing well to blend in cornstarch. Add lemon slices. Cook over medium heat until thickened, stirring constantly.

Remove lemon slices and spoon part of glaze over turkey breast.

Baste breast with glaze every fifteen to twenty minutes. If turkey browns too quickly, cover with foil tent.

Poster's Notes:
My favorite turkey glaze for skinless turkey breast. You may have to increase quantities.
