Turkey Breast, Asian (M)

Serves: Depends on the size of the turkey breast

1 4-to-5-lbs. whole turkey breast
Minced garlic
5 to 6 tablespoons soy sauce
3 tablespoons red horseradish
1/4 cup apricot preserves
1/2 cup duck sauce

Rub breast with the minced garlic. Combine the remaining ingredients and spread over the entire breast. Cover and allow to marinate in refrigerator for several hours or overnight, turning turkey breast and spooning sauce over it several times.

Heat oven to 325°F and cook breast covered with foil, allowing 20 to 25 minutes per pound. Turn to bake on each side. Uncover towards the end of baking time to allow to brown.

Remove from oven when juices run clear when pierced with a fork, at about 170°F to 180°F on a meat thermometer. Internal heat will extend cooking process, so don't leave in oven too long. Allow to cool before slicing.
