Mushroom Matzo Stuffing II (P, KLP, TNT)
Serves: 40 to 50

1 lb. salted crackers or matzo, broken into pieces, not crumbs
1 to 1-1/2 lb. fresh mushrooms, wiped clean and sliced
2 large onions, chopped
1 bunch celery, chopped
4 carrots, peeled into strips
margarine for sautéing

In a large skillet, melt some margarine and sauté the onions and celery, and place in a very large bowl with the crushed crackers or matzo.

Melt more margarine as needed, and sauté the mushrooms. Then add to the stuffing mixture.

Peel the carrots into the stuffing mixture and mix well.

Use with Successful Turkey (click here for recipe).

Poster's Notes:
For Passover, just switch to matzo instead of crackers. [Archivist's Note: CYLHA, Consult Your Local Halachic Authority, regarding the appropriateness of a dry-roasted meat for the Sedarim.]
