Mushroom Matzo Stuffing II (P, KLP, TNT)

Serves: 40 to 50

1 lb. salted crackers or matzo, broken into pieces, not crumbs
1 to 1-1/2 lb. fresh mushrooms, wiped clean and sliced
2 large onions, chopped
1 bunch celery, chopped
4 carrots, peeled into strips
margarine for sautéing

In a large skillet, melt some margarine and sauté the onions and celery, and place in a very large bowl with the crushed crackers or matzo.

Melt more margarine as needed, and sauté the mushrooms. Then add to the stuffing mixture.

Peel the carrots into the stuffing mixture and mix well.
