8 matzos crushed
Mix the crushed matzos with the hot chicken stock.
Heat 2 tablespoons olive oil in a skillet and sauté the onions and chopped garlic until transparent and lightly golden. Set aside in bowl.
Heat the rest of the olive oil in the skillet and sauté the mushroom pieces until lightly cooked.
Add the sautéed onions and garlic to the matzos and stock. Add the sautéed mushrooms, beaten eggs, salt and pepper, and chopped parsley. Fold all ingredients well. The stuffing is ready to stuff chicken. It can also be served in a casserole as a side dish baked in a preheated 350°F oven for 30-40 minutes.
