1/2 cup shortening
Sauté the onions in the shortening. Stir in the remaining ingredients and cook for 10 to 15 minutes or until vegetables are soft.
Stuff into fowl and roast as usual or pour into well-greased casserole. Bake at 350°F, stirring often until well browned and soft. If stuffing appears dry, add chicken soup or broth.

1 cup matzo meal
1/2 cup oatmeal (eliminate for Passover)
2 large potatoes, grated
3 carrots, grated
1 tablespoon season salt
2 eggs
1 small can mushrooms with water
This is the recipe from my dear Mother. I love it, and the last time I made it, it never made it to the house I was supposed to bring it to. I ate it all before :) It is not exactly what you asked for, but you could adjust. I always make it in a casserole, and after mixing it a few times, I let a crust form on the top.
