Apricot Stuffing (M, KLP, TNT)
Source: Kosher Home's Jewish Living, March/April 1979
Serves: About 6-8

4 cups matzo farfel/ferfel
1 cup orange juice
1/4 cup margarine
1/3 cup chopped onion
1/3 cup chopped celery
1/3 cup chopped red pepper
1 egg, lightly beaten
1/2 cup diced apricots or golden raisins
1/2 tsp. salt
1/2 tsp. grated orange rind

In large bowl, soak farfel/ferfel in orange juice.

In skillet, melt margarine; sauté onions, celery, and red pepper until soft. Add sautéed vegetables to farfel/ferfel.

Stir in egg, apricots (or raisins), salt, and orange rind; mix well.

Spoon stuffing loosely into neck and body cavities of the Apricot Capon (click here for recipe).

Poster's Notes:
I will probably prepare this stuffing recipe without stuffing it in a capon or anything else, as I think that in and of itself it sounds like a good kugel...or maybe I'll prepare it and spread it across a pan and then roast some chicken on top of it.
