2 leeks, sliced and rinsed
Place leeks on bottom of slow cooker or crockpot. Top with chicken.
Cut corn kernels off the cobs. Sprinkle corn over chicken. Layer carrot over corn and chicken.
Combine tomatoes, oregano, thyme, salt, pepper, and garlic in a small bowl. Spoon into slow cooker. Cover and cook on LOW about 5 hours or until chicken is tender.

6 boneless skinless chicken breast halves or thighs
4 ears corn
1 large carrot, shredded
2 tomatoes, coarsely chopped
2 teaspoons chopped fresh oregano
1 teaspoon chopped fresh thyme
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 clove garlic, crushed
I had a huge supply of leeks last summer and made this a few times. Loved it each time. I use bone-in chicken thighs, but I think boneless would work better. I'm just too lazy to debone them.
