Chicken, Crockpot I (M, KLP, TNT)
Source: An ancient Rival Crockpot Cookbook (the kind you get with the pot when you buy it)
Serves: 4

1 chicken cut in parts (or a package of 4 breasts)
2 carrots, sliced (I use more)
2 onions, sliced
2 celery stalks with leaves, cut in 1" pieces (again, I use more)
2 teaspoon salt (I use about 1 teaspoon because I use the Kosher chicken bouillon that is very salty)
1/2 teaspoon coarse black pepper
1/2 cup water, chicken broth, or white wine
1 teaspoon dried basil

Put carrots, onions, and celery in the bottom of the crockpot, add chicken pieces, top with salt, pepper, and liquid. Sprinkle basil over the top.

Cover and cook until done (LOW 7 to 10 hours; HIGH 2-1/2 to 3-1/2 hours, but use 1 cup of broth if you do it on high).

Poster's Notes:
For anyone looking for an easy and good (!) crockpot chicken recipe, here's one to try. I add a few potatoes, cut in quarters.
