1 tablespoon olive oil, for sautéing
Heat oil in saucepan. Add onion and garlic and sauté until onion is translucent. Add chicken and lightly brown. Add stock and deglaze the pan. Add chili powder and chipotle. Bring to boil, reduce heat, cover, and simmer 15 minutes or until chicken is cooked through.
Add greens, stir in, cover pot, and continue to simmer 10 minutes or until greens are wilted by still have some body. Serve over noodles.

2 cloves garlic, minced
2 boneless skinless chicken breast halves, or thighs
1 cup chicken stock
1 tablespoon chili powder
1 small chipotle pepper, diced
2 cups greens, shredded
I was looking for a way to use up some kale that I had lying around and I came up with this. It's very tasty, but spicy. If you don't like the heat, find a less potent chili powder and leave out the chipotle. (Although I think the chipotle is the best part, but that's just me...)
