Mom-Mom's Sonia's Chicken (M, KLP, TNT)

Serves: 4

1 chicken, cut into 8ths
4 cloves garlic, peeled and sliced
2 tablespoons olive oil
1/2 cup dry red wine
1/2 teaspoon dry basil
1/2 teaspoon oregano
1/2 teaspoon pepper, or red pepper flakes - if you like hot
fresh parsley, for garnish

Place chicken in a shallow baking pan. Sprinkle with garlic slices all around (under as well) the chicken pieces.

Pour the oil and wine over the chicken, then sprinkle the basil, oregano, and pepper. Cover the pan tightly with foil.

Bake for 45 minutes in a preheated 350°F oven. Remove the foil and bake uncovered for an additional 15 minutes.

Garnish with parsley when you are ready to serve. Good with noodles or rice.
