1 whole chicken
Wash the chicken. Make lots of slits in the chicken and place garlic d jalapeno in the slits. Stuff the cavity of the chicken with more garlic and jalapeno. [On the show, Emeril also put sweet potatoes in the cavity. I don't like them so left them out.]
Pour mixture of lemon juice and sugar over the chicken and let sit in the refrigerator overnight.
Roast uncovered at 375°F.

I don't know the title so made up my own.
The garlic and jalapenos lose their pungency during the baking process. A wonderful mellow taste remains.
This recipe was actually for used for duck.
The lemon juice and sugar combo makes the skin really crispy.

This recipe is not pretty. I got the information while I was watching Emeril but the TV was mute (the baby was sleeping). No real measurements but they really aren't needed.
