Chicken, Funky (M, KLP, TNT)

Serves: 3-4

1 whole chicken
many whole cloves garlic, halved
many jalapeno chile peppers, seeded and halved
mixture lemon juice and sugar

Wash the chicken. Make lots of slits in the chicken and place garlic d jalapeno in the slits. Stuff the cavity of the chicken with more garlic and jalapeno. [On the show, Emeril also put sweet potatoes in the cavity. I don't like them so left them out.]

Pour mixture of lemon juice and sugar over the chicken and let sit in the refrigerator overnight.

Roast uncovered at 375°F.

Poster's Notes:
This recipe is not pretty. I got the information while I was watching Emeril but the TV was mute (the baby was sleeping). No real measurements but they really aren't needed.

I don't know the title so made up my own.

The garlic and jalapenos lose their pungency during the baking process. A wonderful mellow taste remains.

This recipe was actually for used for duck. The lemon juice and sugar combo makes the skin really crispy.
