Spanish Chicken and Rice, Easy (M, TNT)

Serves: 1

1 boneless skinless chicken breast, cut into strips
1/4 small onion, diced
1 clove garlic, minced
1 tsp. olive oil
Rice (for one) about 1/2 cup)
Quarter of a 19 oz. can diced tomatoes with liquid
1/2 cup water
Small chopped hot green pepper

Heat oil in frying pan. Add onion and garlic for 5 minutes. Add chicken and brown. Remove from pan.

Add rice and sauté for 1 minute. Add all other ingredients back to the pan. Serve when water is absorbed (about 20 minutes or so).
