Season chicken with salt and pepper. Heat oil in large frying pan over medium heat. Add chicken and brown all over. Remove and set aside.
Add onions to pan and cook until just beginning to brown, 3 to 5 minutes. Add rice and cook, stirring, until coated with oil and translucent, about 3 minutes. Stir in broth and tomato paste. Add cinnamon stick and arrange chicken on top. Cover and cook over low heat until chicken is tender and rice has absorbed liquid, 20 to 25 minutes.
