Arroz con Pollo IV (M, TNT)

Serves: Varies on amount of chicken used

Cooked soup chicken, cubed
1 8-oz. box or package yellow rice mixture
1 green or red bell pepper, diced
1 onion, diced
1 or 2 bay leaves (be careful, bay leaves are tricky)
1 2-oz. jar minced pimientos, in this case pimientos are pickled red bell peppers. I often substitute jarred roasted red peppers, drained and diced
1 can beer
Lots of fresh cilantro and/or parsley
Canned or frozen peas

Start cooking the package of yellow rice mix, substituting the beer for the water (or part of the water, making up the difference called for with water).

Add the onion, bell pepper and bay leaf(s). Cook as per package directions for 15 minutes then stir in the chicken and pimientos and cook until the rice is tender.

To serve garnish with the peas and cilantro/parsley.
