2 cups cooked, cubed chicken
Combine the chicken with the scallions, parsley, cilantro and watercress.
Mash two of the avocados and add the lemon juice, oil, salt and pepper. Dice the remaining avocado and add to the chicken and herb mixture.
Add the avocado dressing, toss lightly and serve on greens or fill the avocado shells.
