Chicken Salad w/Avocado Dressing (M, TNT)
Source: The abundance of avocados that fell off my tree in the last hurricane
Serves: 2

2 cups cooked, cubed chicken
3 ripe avocados
2 scallions chopped
1/4 cup chopped parsley
1/4 cup chopped cilantro
1 cup finely chopped watercress leaves
juice of 1/2 lemon
1 tablespoon corn oil or other light vegetable oil
salt and pepper
lettuce

Combine the chicken with the scallions, parsley, cilantro and watercress.

Mash two of the avocados and add the lemon juice, oil, salt and pepper. Dice the remaining avocado and add to the chicken and herb mixture.

Add the avocado dressing, toss lightly and serve on greens or fill the avocado shells.
