1 big avocado, cut into small pieces
1 chicken breast, cut into strips
1 small onion, cut into small pieces
2 tablespoon sliced olives (I buy them ready made)
1 small carrot, cut into matchstick size
2 tablespoon ketchup + few drops of Tabasco (hot sauce)
1 tablespoon olive oil
1/2 teaspoon garlic powder
salt, fresh ground pepper
2 tablespoon sesame seeds, or pine nuts, or pieces of pecan nuts*
*Fry them slightly in frying pan without oil. Be careful not to burn it.
In a big frying pan, or a wok, warm up the olive oil and fry lightly the chicken, add all ingredients but the avocado and sesame seeds. Continue to fry mixing all the time about 5 minutes. Switch off heat.
Add the avocado. Mix until well blended. Be careful not to mash the avocado. Just before serving, heat only once the salad with the avocado in it. Arrange 8 small serving plates with lettuce leaves. On top put some of the warm salad and toss with some sesame seeds.
Note: At this stage, you prepare the salad ahead and keep it in a warm place. Be careful not to over heat the avocado, as it tends to get bitter.
