Chicken Salad, Tarragon (M, KLP)

Serves: 4 to 6

1 pound cooked chicken breast, chopped
1/2 cup finely diced celery
1/4 cup finely diced onion
1-1/2 tablespoon chopped tarragon
1 cup mayonnaise

Mix together all of the ingredients and allow the flavors to blend in the refrigerator overnight. Serve as a sandwich or stuffed into tomatoes on a bed of lettuce.

Poster's Notes:
All this talk (and I do mean ALL) about chicken leftovers from soup making has set me to looking for chicken salad recipes. This one sounds particularly good, especially as I have a nice looking tarragon plant in one of the multi-herb containers on my front steps.
