Chicken Salad, Israeli-Style (M, TNT)

1 chicken breast
Lemon juice
1 kosher dill pickle
1/4 large red onion
1 tomato
1 large red beet (can use canned)
1 roasted red bell pepper (can use preserved)
Lettuce, shredded
Tiny soup croutons (soup almonds)
Bottled dressing, your favorite

Cut the chicken breast into 2 pieces. Sprinkle with lemon juice, salt, and pepper. Marinate for at least 20 minutes (or use already cooked chicken).

Cook the chicken breast and dice very finely (Israeli Salad style) all of the ingredients except the already tiny croutons. Mix all together, then combine with the dressing. Place in a serving bowl or individual plates and sprinkle the soup croutons on top.
