Chicken Salad in Stuffed Cucumbers (M, KLP, TNT)

Serves: 4

2 cucumbers, halved lengthwise
2 cups cooked chicken, diced
1 cup celery, diced
1/2 green pepper, diced
2 tablespoons salad dressing
1 tsp. salt
Paprika to garnish

Scoop pulp out of cucumber halves.

Cut up pulp and mix well with remaining ingredients. Refill cucumber shells and garnish with paprika.

Poster's Notes:
If I had the time, I'd blanch or stir-fry the celery and green pepper. If the chicken wasn't well-seasoned (say, it was soup chicken), then I'd add some seasonings like pepper and garlic powder. The recipe isn't explicit but I believe that 'salad dressing' refers to the mayonnaise-like thickened sauce and not an ordinary vinaigrette.
