Make Salad:
Put the spinach leaves on the plates. Top with the chicken, diced red peppers, grated carrots, cut up mango chunks, and black olives.

2 boneless broiled chicken breasts
Salt and pepper to taste
Onion powder to taste
Za'atar to taste
2 handfuls of baby spinach leaves
1/2 cup red peppers, diced
2 peeled carrots, grated in the blender with a little orange juice
1 mango, cut in chunks
Handful of black olives
1/2 cup orange juice
1/4 cup salad oil
1/4 tsp. ginger
Spice the chicken breasts to taste. Broil the chicken breasts just until there is no pink on the inside when sliced.
Mix all ingredients well. Pour dressing over the salad and serve.
Last Erev Shabbat, it was unbearably hot here. I decided that if there was a meal I could fix in just a few minutes, I was willing to cook. Otherwise, we'd be eating tuna! So I came up with the following recipe, which worked out just fine and was delicious.
