1 pound chicken (without skin and bones)
Slice garlic and onion and sauté in oil until onion is limp.
Cut chicken into bite-sized pieces and coat thoroughly with matzo meal. (I dumped the chicken and the meal in a zipper bag, sealed it, and shuffled the contents around until the chicken was coated.) Add chicken to skillet, sprinkle liberally with pepper, and cook about 10 minutes.
Add tomatoes, cover, and reduce heat. Cook another 10 minutes or so; basically until the chicken is thoroughly done and the tomatoes are mostly cooked down.

large (24 oz?) can tomatoes (with juice)

I assembled this last night in an effort to use up more of the matzo meal without baking. Quantities are approximate because that's the way I cook; sorry. (This recipe ought to be pretty resilient.)
