1/4 cup margarine
Melt margarine in a medium sauce pan. Stir in flour until absorbed by the margarine. Do not brown. Slowly add broth while stirring. Mixture will thicken when it starts to boil. Reduce heat and simmer until desired thickness.
Adjust seasoning (I found the broth had enough salt, so I never added any) Fold in chicken and peas and any other vegetables. Serve over rice or potatoes.

2 cups chicken broth, heated
1-1/2 to 2 cups cut up left over chicken. (sometimes I buy a lb. of deli turkey unsliced and cut into chunks)
frozen peas (optional)
salt as needed
pepper
