This isn't really a recipe, but I do this often with the soup chicken.
Cut up or shred the chicken. Put it into a crockpot along with sliced onions [and the soup vegetables if you wish] and mushrooms.
Pour in 1 bottle of barbecue sauce, and set the crockpot on low and let it simmer all day.
Serve over rice or noodles. Very good. I do the same thing with the turkey after Thanksgiving.
