1/2 cup olive oil
1/4 cup wine vinegar
1 tsp. salt
1 tsp. pepper
1 tsp. oregano
1 tsp. paprika
1 clove fresh garlic (I use 2-3 cloves)
1 red onion
1 pound cubed chicken
Blend all ingredients except chicken in blender. Pour over the chicken. Marinate at least 48 hours. String chicken on a skewer and grill until done.
I only marinated 24 hours, and the chicken was wonderful. I imagine that you could roast the chicken parts and still have lovely results. I poured the marinade into a ziplock bag, added the chicken, and just turned the bag over in the refridg every time I happened to go in for one thing or another.
