Chicken Schnitzel w/Twist (M, TNT)

Serves: 10

10 boneless chicken breasts
6 large mushrooms, sliced
1 medium onion, chopped
2 tbsp. oil
1/2 cup mayonnaise
2 tbsp. soy sauce
Flavored bread crumbs, to coat

Fry mushrooms and onions in oil until onions are translucent. Pour into bottom of baking dish.

Combine mayonnaise and soy sauce. Spread mixture on chicken breasts and coat with bread crumbs.

Roll each chicken breast up and place in pan with onions and mushrooms. Bake covered at 350°F for 45 minutes.

Poster's Notes:
This is one of my favorite recipes. The editors of "The Shomron Chef" tried it out even before the cookbook was published and everyone who tried it liked it. I sometimes leave out the mushrooms and just put the chicken rolls in the pan with the onions. Don't leave the chicken in more than 45 minutes because it cooks quickly. This is a great recipe for schnitzel without frying and it comes out nice and soft.
