Chicken Rissoles (M, TNT)

Yield: 6 to 8 patties

1/2 pound minced chicken
Small onion
1 or 2 celery stalks
1/2 cup fresh bread crumbs
Sprig of parsley
Salt and pepper
1 egg (white only if you are worried about cholesterol)

Place all ingredients except chicken in food processor and chop until fine. Add chicken and process until just blended.

Form into patties and fry in a non-stick pan.

Heat tomato juice or puree and place patties in it and simmer until cooked and heated through, about 5 minutes on each side. A pinch of sugar or sweetener may improve the flavour.
