Chicken w/Plum Compote (M, KLP, TNT)

Serves: 4

1 chicken, cut into eighths
1 jar or can of plum compote
Onion soup mix

Rub the chicken with the onion soup, pour the compote on top and bake, covered, for one hour.

Poster's Notes:
The positive side of this is that it is so fast and easy, and that the chicken was so juicy.

But on the negative side, not zingy enough...I would add more onion soup mix, some garlic, and I wasn't sure what "compote" in a jar or can was, I poured one can of purple plums on top, but had to pick the pits out first.

I will try this again with dried fruits (apricots, raisins, prunes) and orange juice and/or apple juice instead of the sugary syrup from the plums.

And I am always in favor of adding an onion.
