4 split chicken breasts
1/4 cup soy sauce
1/4 cup sweet sherry
1 tbsp. sesame oil
1 tbsp. hot pepper oil (I'm partial to "Mongolian Fire Oil")
2 tsp. dark rice vinegar
2 tsp. honey
5 to 6 large cloves garlic, crushed
An equivalent volume of fresh ginger, peeled and sliced
1 banana
Preheat oven to 375°F.
Cut 2 shallow vertical slits in the meat of each breast and arrange in a baking dish.
Put remaining ingredients in a food processor and blend until smooth. Pour over chicken and bake for 45 minutes, basting 2 or 3 times.
