Chicken:
Marinade:
Mix all marinade ingredients. Add chicken. Marinate overnight in fridge.
Remove chicken from marinade and pat dry, thoroughly. Heat oil in frying pan. Fry chicken pieces until golden. Remove to platter.
Strain marinade. Boil liquid to reduce. Fry the onion and garlic slices in the same pan that chicken was fried.
Blanch kumquats in boiling water for approximately 20 seconds. Remove.
Return chicken to frying pan with onion and garlic. Pour reduced marinade over chicken. Add kumquats. Salt and pepper to taste.
Cover with tight-fitting lid. Bake in medium oven for 45 minutes (covered for 30 minutes; uncovered for last 15 minutes).
