Chicken, Hong Kong (M, TNT)

Serves: 4 to 6

1 chicken cut into pieces
1 tbsp. oil
3 tbsp. soy sauce (thick variety)
1 tbsp. brown sugar
Several cloves of garlic

The night before, mix the marinade ingredients and place in a deep dish (I use a zip-lock plastic bag).

When ready to cook, put everything in a frying pan and bring to a boil. Keep covered and turn heat down to low. Cook for about 30 minutes (depending on chicken).

When nearly done, remove lid and turn heat up again and cook until all the moisture has evaporated. Brown the chicken until it has become very dark and sticky looking, turning to get the coating on all sides.

Poster's Notes:
I find the above proportions a bit salty, so I increase the brown sugar or add honey. I find the marinade mixes better in a blender if you don't mind the clean up.
