Chicken, Hawaiian II (M, TNT)

Serves: 4 to 8

1 or 2 chickens, cut into serving pieces
1 large can of pineapple slices
2 tablespoon soy sauce
2 tablespoons of corn starch
1 cup of pineapple juice (use juice from canned pineapple)
1 cup of brown sugar
1/2 teaspoon salt
1/3 cup vinegar
Onions
Green and red peppers

Make Chicken:
Cut chicken into pieces and brown in a 400°F oven for 40 minutes.

Make Sauce and Assembly:
Combine sugar, corn starch, vinegar, juice, salt, and soy sauce in a pan and cook until thick and clear.

Layer onions, peppers, and pineapple over the browned chicken and spoon the sauce over all. Bake in a 350°F oven for 1 hour.

Poster's Notes:
You can bake this in an oblong Pyrex casserole dish that fits into a silver server. The green and red peppers plus the pineapple rings make this a beautiful presentation.
