2 onions, sliced
Spread onions in bottom of greased 9"x13" glass baking dish; sprinkle with salt and pepper.
Arrange chicken on top (remove skin first if you wish). Sprinkle with salt and pepper.
In small bowl, combine honey, mustard, lemon juice, oil, and spices until well blended. Pour over chicken. (Recipe may be prepared ahead of time up to this point. Refrigerate, covered, up to 8 hours).
Bake, uncovered, in 375°F oven, 40 to 45 minutes or until chicken is no longer pink inside, basting 2 or 3 times during cooking.

1/3 cup liquid honey
1/4 cup Dijon mustard
2 tbsp. lemon juice
2 tbsp. vegetable oil
1 tbsp. curry powder (I substitute nutmeg, cinnamon, or coriander)
The onions take on a wonderful sweet flavour while the chicken bakes.
