3 to 4 chicken breasts (bone in), halved
Preheat oven to 350°F. Clean chicken and pat dry.
Place chicken skin side up in an ovenproof baking dish. Brush chicken breasts lightly with oil, and sprinkle a little cayenne pepper on each piece. Bake at 350°F for 30 minutes. If using boneless breasts, cook only for 15 minutes or so.
Remove chicken from the oven and turn temperature to broil. Brush the tops of the chicken with Dijon mustard, brushing back and forth a couple of times. The more times you brush, the spicier the chicken will be. Sprinkle the bread crumbs over the mustard. Drizzle each piece with melted margarine.
Broil for 3 to 5 minutes or until the coating is golden brown.

6 tablespoons margarine, melted
An easy flavorful dish, that is good hot or cold. I made some to eat hot, some to freeze, and some to eat cold the next day.
