1 chicken, cut into eighths
Put onion soup into the mixing bowl and declump it with a fork if necessary. Mix onion soup, apricot preserves, and French dressing together until well blended. Dip chicken pieces (on both sides) or pour mixture over chicken.
Make sure chicken is in one layer. If desired, you may sprinkle some apricots throughout the pan. Bake at 350° degrees for 1-1/2 hours, basting occasionally.

You can skin the chicken if you want. I have made it both ways. It's definitely better with skin, but for health reasons I usually skin them these days.
