Make Crust:
Bake at 400°F for 8 minutes or until the edges are brown.
Make Filling and Assembly:
Stir in lemon juice and rind. Cool completely. Fold in 6 cups of the mixed fruit. Turn into the crust and chill 4 hours.

1 stick margarine
1/2 cup sugar
2 egg yolks
2 cups flour
1/2 cup sugar
3 tbsp. cornstarch
1-1/2 cups orange juice
1/4 cup lemon juice
1 tsp. grated lemon rind
6 cups fruit: sliced bananas, blueberries and strawberries, halved or quartered if large
Mix margarine, sugar, and egg yolks together. Add flour and stir until you can form a ball. Press on bottom and sides of an 11" tart pan.
Mix together the sugar and cornstarch in a medium saucepan over low-medium heat. Gradually stir in orange juice until completely smooth. Stirring constantly, bring to boil over medium heat and boil for 1 minute. Remove from heat.
You could use any combination of fruit but this one is especially good for July 4th celebrations.
