1 9" pie shell
Combine all ingredients except 1/2 cup of the soy milk. Beat with mixer until smooth. Mix in the rest of the soy milk on low until all is blended.
Spread in an unbaked 9" pie shell and bake on the lower oven shelf at 350°F for 50 to 60 minutes or until lightly browned and a toothpick inserted in the middle comes out clean. Cool on a wire rack. I like this without any topping.

2 cups sweet potatoes (yams), cooked, mashed
2 eggs
1/2 cup sugar or sucralose substitute
1 tablespoon margarine, melted and cooled slightly
1/4 teaspoon salt
1-1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1 teaspoon vanilla
1 cup soy milk
With all the recipes for sweet potato dishes, I must share what I have learned since moving to North Carolina. Take some of those sweet potatoes and make a pie! Sweet potatoes/yams don't require as much sugar as pumpkin, and sucralose works very well. Give this a try sometime!
