1/4 cup margarine, melted
Beat eggs until well blended. Mix in remaining ingredients until smoothly blended. Bake in a 9" deep-dish pie shell at 375°F for 1 hour or until firm.
Poster's Notes:
If you are not using the pecans, then you can use a regular pie shell (not deep-dish) and adjust the baking time. You can substitute brown sugar for the honey.
I multiply the recipe by 5 (without using the nuts), and then make 4 pies in the deep dish pie shells with it. Can also use any hard squash or sweet potatoes/yams.
