1 envelope unflavored (kosher) gelatin
In medium saucepan, combine gelatin, sugar, and salt. Stir in water and grapefruit juice. Let stand 1 minute.
Stir over low heat until gelatin is completely dissolved, about 5 minutes.
Chill until slightly thickened.
Add grapefruit sections to 3/4 of the chilled gelatin mixture and spoon into the baked pastry shell.
Fold whipped cream into the remaining gelatin mixture.
Spoon over grapefruit layer and chill until firm.
