Pie, Apple Lemon (P, KLP, TNT)

Serves: 8

Crust:
4 eggs, separated
3/4 cup sugar 175ml
3 tbsp. water 45ml
1/4 cup potato starch 50ml
1/4 cup cake meal 50ml
Pinch of salt

Filling:
3/4 cup sugar 175ml
3 tbsp. potato starch 45ml
3 tsp. lemon rind, grated 10ml
3 tbsp. lemon juice 45ml
1 tbsp. cold water 15ml
1 egg beaten
8 apples grated
Pinch of salt

Meringue:
2 egg whites
1 tbsp. sugar 15ml

Make Crust:
Beat egg whites with half the sugar until stiff.

Beat yolks with remaining sugar, then add water and sifted dry ingredients. Fold in egg whites.

Pour into a lightly greased 9" (1L) pie plate. Bake at 350°F/180°C until golden.

Make Filling:
In saucepan, mix sugar and potato starch. Add remaining ingredients, and heat to boiling. Boil 2 minutes, stirring constantly.

Cool. Pour into crust. Top with meringue and bake at 300°F/160°C until golden.

Make Meringue:
Beat egg whites until frothy. Gradually add sugar, beating constantly until stiff.
