8 large cucumbers
Peel cucumbers and cut in 1/2" round slices. Remove seeds.
Soak in 1 gallon water and 1 or 1-1/2 cups pickling lime 24 hours. (Do not use a metal container.) Rinse and let stand 3 hours in cold water. Drain.
Mix vinegar, alum and food coloring. Add cucumbers and enough water to cover; simmer 2 hours. Drain.
Then make syrup of 2 cups water, 2 cups vinegar, sugar, cinnamon and candies. Add cucumber rings and return to boil. Remove from heat, let stand overnight. Heat cucumbers in syrup, pack in boiling jars and seal.
