Many years ago our neighbor came to show my Mother how she cooks Istamboli polow (rice with green beans).
When cooking was finished, she took out a few green chiles from her shopping basket, put them on a thin skewer and grilled (on the gas flame) until peel was covered with black spots.
Then she peeled the burned skin and covered the chiles with red wine vinegar and let rest until food was ready to serve. Delicious!!
If you prefer milder taste discard seeds after grilling procedure.
