Matzo Balls, Whole Wheat Light (M/P, KLP, TNT)

Yield: About 17 2" knaidlach when cooked

2 eggs
1 tbsp. oil
1/2 cup whole wheat matzo meal
1/2 tsp. salt or to taste
1/4 tsp. ginger powder
1/2 tsp. onion powder
1/4 tsp. garlic powder
4 tbsp. water or chicken soup

In a medium-sized bowl, lightly beat eggs with oil. Add matzo meal and seasonings and stir until smooth. Then stir in water. Let mixture stand for 20 minutes until all liquid is absorbed.

Bring 2 quarts of water to a boil. With wet hands, take about 1 tsp. of matzo ball mix and roll it between your palms to a ball. Mixture will be very soft.

Gently drop balls into water. Cover and simmer over low heat about 30 minutes or until firm. Cover and keep warm until ready to serve.
