2 tbsp. oil
Mix all the ingredients together and refrigerate overnight or for a few hours.
Make into balls. This is easier if you keep your hands slightly wet so that the mixture doesn't stick to your hands.
Bring a large pot of water to a boil and drop the matzo balls into the boiling water. Then turn it down to a simmer and simmer for 20 minutes.
You can freeze the matzo balls in containers in the water you boiled it in, or you can take them out of the water and freeze on a cookie sheet and when they are frozen you can put them into a zip lock freezer bag.

Here is my mom's matzo ball recipe that is easy, and always comes out light and fluffy. I usually double or triple the recipe and freeze the extras for another week.
