Matzo Balls, Low Fat II (P, KLP, TNT)

2 eggs
1/2 cup egg egg substitute
Dash nutmeg
Dash cinnamon
1/4 tsp. salt
1 cup matzo meal
1/4 cup seltzer or couple of tablespoons chicken soup (to lighten the mixture)

Bring the water to boil with some salt; then mix the matzo balls; do not mix them in advance. Using the scoop, drop the balls into the boiling water. Cover and lower the temperature to simmer for 5 minutes. Without opening the lid turn off heat and let steam for 25 minutes.

Poster's Notes:
When I make matzo balls it is really easy when I use a cookie scoop. No messy hands and all the same size. I also simmer mine for 5 minutes and then turn off the heat (without lifting the lid) and steam them for 25 minutes.
