Matzo Balls II (P, KLP, TNT)
Source: Mother-in-Law
Yield: 30 matzo balls

4 beaten eggs
4 tablespoons oil
1/2 cup cold water
1 teaspoon salt
1 cup matzo meal
1/2 cup instant potato flakes
--I have used the flakes from boxed latke mixes
1 tablespoon instant onion flakes

Let it stand for 20 minutes.

Boil in water for 1 hour. Drain and cool.

Poster's Notes:
When cooled I freeze them on a cookie sheet and when frozen put them in a bag. To thaw, I throw them frozen into the cooked soup as it is heating up. They are very light and fluffy and great.
