Peel and grate the apples and pears into a large bowl.
In a food processor, finely grind all the nuts. Add the chopped dates, figs, and raisins and 1/4 cup wine. Process into a paste. Add the nut mixture to the bowl of grated fruit.
Blend in the spices and add as much of the remaining wine to make a smooth paste.
