3 cups assorted dried mix of cranberries, cherries, blueberries, raisins, and chopped dates
Cut the orange into eight pieces. Pulse several times in the food processor.
Add dried fruit, ginger, and sugar (if used) and pulse until mixture is coarsely chopped and begins to form a ball. If mixture doesn't come together, add orange juice, a few teaspoonfuls at a time. Don't overdo the liquids; this should more like cranberry relish in texture.
Make it ahead of time, so it can season in the refrigerator.

Because there are no apples, it will last a long time. I usually make fruit bread with the leftovers using my favorite banana bread recipe and adding the charoset to it.
